I can highly recommend a recipe I just made up/adapted.
Lentil soup
Ingredients:
500g carrots
125-150g red lentils
1tsp whole cumin
Pinch dried chilli flakes/finely chopped fresh chilli
Oil of some description (I used olive)
1l vegetable stock (I used stock made from my amazing stock recipewhich I use a lot)
125ml milk/smaller dollop of cream
Method
1) Grate/finely chop the carrots
2) Dry fry the spices in a big pan (you could probably add some other spices if you had the least idea what you were doing. I don't) for a minute or so, until they begin to smell nice and spicey and toasted. If you smell burning, remove from the heat!
3) Add the olive oil, carrots, lentils, stock and milk and simmer for 15-20 mins until everything is soft and yummy. Add more water if things are getting a bit thick and gloopy
4) Whizz up with a stick blender if you want to - we did, I think it improved it.
4) Serve with a dollop of yoghurt and a drizzle of olive oil if you want to be snazzy. We had ours with freshly made bread too. Mmmmm super cheap and yummy.
