Just an ordinary morning. I love it when a really ordinary day ends up as a series of lovely things - enjoying the sunshine, a peacefully sleeping boy, drop scones (are they an exclusively British thing? I have no idea. They're basically thinnish pancakes) with syrup, the beginnings of a new quilt.
By the way, that's Adam trying to look thin.
Drop scones:
- 8oz self raising flour
- 1oz caster sugar
- Pinch salt
- 1 medium egg
- 1/2 pt milk
Weigh the dry ingredients out into a bowl, making a well in the centre. Add the wet ingredients to the well and whisk to combine, until you have a smooth batter. Heat a little oil or butter in a frying pan (or a cast iron griddle if you're really lucky. I aspire to own one) and dollop in three (or more, depending on the size of your pan) blobs of batter, a little over a tablespoon each. Cook for around 60 seconds, until the scones can be easily flipped, then cook for 30 seconds or so on the other side. Serve with butter, jam and/or syrup, as you please.
Oooh, drop scones. Haven't cooked/eaten those for such a long time! So, drop scones or diet ... mmmm ...

Drop scones are a Sunday morning ritual here! The DH works nights & stays up on Sundays until I get downstairs & make the scones, then he & my son see who can est the most. I tend to eat mine inbetween cooking them or I don't get any!! Then I chill with the coffee pot....
